Chill, It’s Just Chicken Chili!

Hey everyone, another post here! I was so excited to join the Chili Cook-Off’s at work! What a great experience and it was my first time making food for a large crowd. I was feeling real confident about my chili that I thought I should share it with other people. Well I didn’t win either of the cook-offs but I was just so happy to be able to participate and get great compliments about my chili. But this chili here is so special to me. Here is why……


I made this chili from scratch! I took it from a regular recipe and swapped it out for some other ingredients, added other ingredients, and also changed the measurements needed for spices and herbs. It came out great! I got really creative in the kitchen and used spices I thought that would make my chili popping! Lol. I didn’t want it too hot but just spicy enough that everyone could tell it is chili! I think the biggest change and unfamiliar thing is that I used ground chicken instead of ground turkey or beef. This was my second time using ground chicken! Loved it! I also added a jalapeños to make it different as well as using topping to go along with the chili like cheese, sour cream, avocado, and tortilla chips. Okay enough of talk here it is…

Chill its Just Chicken Chili

  • 1 1lb ground chicken
  • 1 (15 oz) can black beans, drained
  • 1 (15 oz) can kidney beans, drained
  • 2 (15 oz) can of petite diced tomatoes
  • 1 (15 oz) can whole kernel corn, drained
  • 1 medium sweet onion, diced
  • 1 red bell pepper, diced
  • 4 medium garlic cloves
  • 1 seedless jalapeno pepper
  • 5 tbs chili powder
  • 1 tsp coriander
  • 1 tsp oregano
  • 1/2 cup beef broth
  • 1/4 tsp cayenne pepper
  • 1 tsp sea salt (be careful with salt use your best judgment)
  • 2 tsp cumin


  1. Chop up onion, bell pepper, garlic cloves, and jalapeño.
  2. Use a non stick skillet to sauté the ground chicken with just a 1/2 tsp olive oil on medium heat. Be sure to really ground the meat. Do this for about 10-15 minutes, once it is done set to the side.
  3. In the same skillet add just a tad of olive oil and add in the onion and bell pepper. Saute for about 8 minutes.
  4. Turn the crock pot on Low and add your ingredients in any order you’d like!
  5. Leave it on low and cook for about 3.5 hours. Be sure to continue to stir and add salt to taste when needed. It is going to seem like it is not liquified enough but after simmering it will be just fine.
  6. Keep on warm for about 30 minutes, then cool before serving or placing in the refrigerator.
  7. Serve with toppings of your choice such as cheese, avocado, chips, and/or sour cream.
  8. Enjoy!


*You can cook on high for 2 hours *Play with this recipe! Exchange your broths to stock if you like *Change the peppers, have fun with it! *Do not forget to drain the beans before pouring into crock pot *You do not have to cook the onion and red bell pepper first, this is just my preference!
